Brie & Apple Turkey Sandwiches
This Brie & Apple Turkey Sandwich is the perfect balance of creamy Brie, crisp apple slices and savory turkey. You can enjoy this little slice of heaven in under 10 minutes.

Ingredients
- 1/4 cup mayonnaise
- 1 tbsp. Dijon mustard
- 8 slices sourdough bread
- 4 oz. brie cheese, sliced & divided
- 1 gala apple, thinly sliced
- 8 oz. low sodium thinly sliced turkey, divided
- 1/2 cup packed baby spring mix, divided (optional)
Instructions
- Move oven rack to top-third position. Preheat oven to broil on high.
- In a small bowl, stir together mayonnaise and mustard with a fork until combined, about 1 minute.
- On a sheet pan, arrange bread slices with brie cheese on top. Toast in oven until melted and lightly golden, 1–2 minutes. Remove from oven.
- Divide apple slices evenly between four bread slices. Top each slice with 2 ounces of turkey. Spread about 1 tablespoon of mayo sauce and top with some salad greens (if desired).
- Add remaining toasted slices of bread to tops of sandwiches, cheese-side down. Cut each sandwich in half and serve immediately.
