Greek Shrimp Skewers

Ingredients

  • 1 (16-20 count) lb. raw shrimp, peeled and deveined
  • 1 medium red onion, cut into 1-inch pieces
  • 1 medium zucchini, cut into 1/2-inch coins
  • 2 tbsp. Schnucks olive oil, divided
  • 2 cloves garlic, minced
  • 1 tbsp. Schnucks dried oregano
  • 2 tsp. smoked paprika
  • 3 tbsp. Schnucks lemon juice, divided
  • 1/3 cup Schnucks nonfat plain Greek yogurt
  • 2 tbsp. crumbled feta cheese
  • 1/2 tsp. dried dill
  • 1/4 tsp. Schnucks garlic powder
  • 1/4 tsp. Schnucks black pepper
  • 8 11-inch bamboo skewers, soaked in water at least 30 minutes
  • 2 cups cooked Schnucks brown rice, warm

Instructions

  1. In a large bowl, add shrimp, red onion and zucchini. In a small bowl, whisk together 1 tbsp. oil, the garlic, oregano, paprika, and 2 tbsp. lemon juice. Add to shrimp and toss to coat. Let stand, covered and stirring occasionally, at least 30 minutes at room temperature or up to 1 hour in the refrigerator.
  2. In a small bowl, stir together remaining oil and lemon juice, the yogurt, feta, dill, garlic powder and pepper.
  3. Preheat a grill to medium-high. Discard marinade, then thread shrimp, zucchini and onions onto skewers. Grill until shrimp is cooked through and vegetables are charred, 3–4 minutes per side. Serve skewers with rice and yogurt sauce.
